Seaweed Granola
The perfect topping to your yogurt or smoothie. Full of vitamins and minerals, our seaweed granola gives a healthy, tasty crunch to your breakfasts or desserts. Store-bought granola can often contain deceptively high levels of sugar and fat, so it’s a worthwhile investment to make your own. There’s nothing more annoying than having your healthy choices undone by hidden ingredients! We use honey to sweeten our granola, but for a vegan alternative you could use maple syrup or agave nectar. Other dried fruits like raisins and apricots also work well, but make sure you cut the larger pieces down to size to ensure a consistent mouthfeel.
Instructions
- In a large bowl, mix together the oats, roughly chopped nuts, cinnamon and cardamom.
- Add the Arctic Ocean Greens, and mix well.
- Combine the dry mix with the coconut oil and honey and stir until all well coated.
- Spread the granola mix on a baking tray lined with baking paper and roast in the oven for 10 minutes at 170C.
- Take the tray out from the oven and give it a good mix with a spatula, making sure the mixture is roasting evenly.
- Bake for another 5 – 8 minutes or until golden in colour.
- Take the granola out from the oven. Leave to cool without mixing to create chunks.
- When granola is cool, mix in the cranberries.
- Store in the jars or airtight containers for up to 3 months.
