Sweet potato fries with Ocean Truffle Salt
Servings: Makes 4 portions
Sweet potato fries are a great alternative to regular fries – they’re more nutrient dense, and high in Vitamin A. Not to mention – they’re delicious! These fries are seasoned with Lofoten Seaweed’s BBQ & Meat spice blend – a hot and smoky blend of smoked paprika, chilli, garlic and winged kelp. These fries would make a great side dish for our spiced chickpea burger, or our seaweed rice burger – or just as a snack on their own! Seasoned with truffle seaweed salt for an indulgent flavour of white truffles and a hint of ocean freshness.
Instructions:
- Slice the sweet potatoes into batons. Put into a large bowl filled with cold water, then leave to soak for at least 30 minutes (or even overnight).
- Preheat the oven to 220
- Drain the sweet potatoes and pat dry with kitchen paper or a tea towel. Dry the bowl, and put the sweet potatoes back. Add the cornflour, season with the BBQ & Meat spice blend, drizzle with the oil, and shake to coat. The cornflour should be completely absorbed.
- Spread the fries out on the baking tray in a single layer. Roast for 30 minutes, pausing halfway through to flip the fries to ensure all sides become crispy.
- When the fries are crispy and golden all over, remove and dress with the Truffle Seaweed Salt. Serve with your favourite condiment!
