Smoked Seaweed Whipped Butter

Whipped butter is one of those small details that instantly makes a table feel more special. By incorporating air into softened butter, the texture becomes lighter, smoother and almost mousse-like, perfect for spreading generously onto warm bread. In this version, our Smoked Seaweed Flakes, made from organic wakame cold-smoked over beechwood, bring a beautifully balanced smoky aroma that melts naturally into the butter. Serve it alongside bread, with soups, spooned over hot potatoes, or as a finishing touch for fish, grilled vegetables or meat dishes.
Instructions:
- Remove the butter from the fridge and allow it to soften fully at room temperature.
- Cut the softened butter into small cubes and place in a large mixing bowl, or the bowl of a stand mixer.
- Using a hand mixer or stand mixer, whip the butter for several minutes until pale, soft and airy. The colour will become noticeably lighter as air is incorporated.
- Add the Smoked Seaweed Flakes and a pinch of salt, then whip briefly again until evenly combined. Taste and adjust seasoning if needed.
- Transfer to a serving bowl or container. Serve immediately for the fluffiest texture, or store in the fridge until needed. If chilled, remove around 30 minutes before serving to soften.
- Enjoy spread onto warm bread, served alongside soups, or melted over potatoes, vegetables, fish or grilled dishes.
