Smoked Seaweed Whipped Butter

Whipped butter is one of those small details that instantly makes a table feel more special. By incorporating air into softened butter, the texture becomes lighter, smoother and almost mousse-like, perfect for spreading generously onto warm bread. In this version, our Smoked Seaweed Flakes, made from organic wakame cold-smoked over beechwood, bring a beautifully balanced smoky aroma that melts naturally into the butter. Serve it alongside bread, with soups, spooned over hot potatoes, or as a finishing touch for fish, grilled vegetables or meat dishes. 

Instructions:

  1. Remove the butter from the fridge and allow it to soften fully at room temperature. 
  2. Cut the softened butter into small cubes and place in a large mixing bowl, or the bowl of a stand mixer. 
  3. Using a hand mixer or stand mixer, whip the butter for several minutes until pale, soft and airy. The colour will become noticeably lighter as air is incorporated. 
  4. Add the Smoked Seaweed Flakes and a pinch of salt, then whip briefly again until evenly combined. Taste and adjust seasoning if needed. 
  5. Transfer to a serving bowl or container. Serve immediately for the fluffiest texture, or store in the fridge until needed. If chilled, remove around 30 minutes before serving to soften. 
  6. Enjoy spread onto warm bread, served alongside soups, or melted over potatoes, vegetables, fish or grilled dishes.
