Smoked Salmon Heart Waffles with Algae Pearls

These crispy, golden waffles are topped with smoked salmon and finished with Algae Pearls for delicate bursts of the ocean. A simple and playful way to serve a classic Norwegian favourite. These waffles can be shaped into hearts for special occasions or cut into smaller pieces to share as canapés. 

Instructions:

  1. Preheat your waffle iron. A traditional Norwegian heart shaped waffle maker works best, but any waffle maker can be used. 
  2. Prepare the waffle batter according to the instructions on the pack, adding butter, milk or water as required. 
  3. Cook the waffles in the waffle iron. Bake slightly longer than usual to achieve a crisp, golden texture. Transfer to a plate lined with paper towel and allow to cool slightly. 
  4. Cut the waffles into individual heart shapes or bite sized pieces. 
  5. Top each piece with around 1 teaspoon of sour cream, followed by a small slice of smoked salmon. Add approximately ½ teaspoon of algae pearls to each, then finish with a sprig of fresh dill and a light squeeze of lemon juice. 
  6. Arrange on a serving plate and serve immediately while the waffles remain crisp.
